Culinary food trends 2022: mushroom boom, waste-free production and chefs on packages

The well-known international magazine Fine Dining Lovers shared with readers the main trends in the restaurant industry. Although not all of them are very relevant in Ukraine, most of them can already be observed in food establishments.

Waste-free production

It is currently unknown what 2022 will be like, but new trends have already been created in cooking. One of them is by-products, or zero-waste production (reusing various waste products to create new dishes). Every day, chefs invent new uses for potato skins, fish heads or fruit scraps.

Let’s just mention energy bars made from grains used in the production of beer, or juice from cashew apples. All these products help reduce the amount of food waste, which currently amounts to more than a billion tons annually. Not surprised – this is already a well-known trend, you say! Yes, the secondary use of food is not new, but with the development of technology, there will definitely be more interesting positions in this field.

Chefs on store shelves

If you compare the appearance and advertising of products now and 3 years ago, you will notice how much the demand for chefs who major in product packaging has increased. The popularity of chefs and trust in them are currently breaking all records. Two years ago, they never dreamed of being sold in supermarkets, but with the consequences of the pandemic and the search for new sources of income, they are suddenly filling the shelves with their new products.

Boom of mushroom drinks

Kombucha, heritium, chaga and reishi – their popularity has grown significantly in recent years. The counters of the store are filled with the speed of light with a variety of drinks, such as kombucha, latte in cans, coffee, tonics, non-alcoholic craft cocktails.
