Recipe for making cookies on pickled cucumber


I remember that my mother did not miss anything, everything was cooking. She knew how to combine products that I would not have thought of. For example, sugar and brine, well, for example, cucumber. This resulted in cookies that were excellent in terms of their taste. And how can you imagine dough without eggs? But she got away with it, because in their time, eggs were a scarce product. Therefore, I will describe to you a recipe that contains all these raisins and is very simple. The pastry, which turns out on cucumber brine, is crumbly and buttery. These are wonderful cookies that can safely be called mini buns. They are stored for a long time, and remain constantly soft, with a slightly salty taste.

Ingredients for making cookies on cucumber brine:

  1. Pickle (I use cucumber, you can also use any other if desired) – 1 cup
  2. Sugar sand – 1 cup
  3. Sunflower oil (I advise you to take without smell) – half a glass
  4. Wheat flour of the highest grade – 3 cups
  5. Soda – 1 tsp

Cooking cookies on cucumber brine.

Step 1: Prepare the cookie dough.

Pour the brine, sunflower oil and granulated sugar into a deep bowl, mix very thoroughly to obtain a homogeneous mass. For pickling, I advise you to take a fresh cucumber so that it is tasty and not bitter. If we have it very salty, then it should be taken less, you can use 3/4 cup then.

We sift the flour through a sieve to get rid of lumps. Next, pour into a bowl and add a spoonful of soda. It is not necessary to extinguish, as the brine will do it for us. Mix everything thoroughly. We insist the dough a little (15 minutes), after which we roll it out not very thinly on a floured work space.

Then you can use your imagination to make the cookies themselves. You can just make it round, if you have cookie cutters, you can use them. If you have a desire, you can cut out different animals or flowers. Who likes it more.

Step 2: We cook cookies in the oven.

Cover the baking sheet with parchment paper (if you don’t have it, you can simply grease the baking sheet with oil) and heat it up oven to 200 degrees. We spread the cookies on a baking sheet with a distance of 3-4 centimeters between them, so that when the dough is kneaded, it has room to expand. We send the baking sheet to the oven for a while 10 minutes.

The cookies should be slightly browned. I do not recommend the oven for a very long time, because the cookies will not be crumbly, but hard. After that, remove the products from the oven and cool thoroughly. At the same time, you can cover it with a clean kitchen towel.

Step 3: Serve cookies on pickled cucumber.

The taste of the cookies turns out to be quite original and unlike anything else. It doesn’t even smell like brine if someone is afraid and thinks that cookies will be given to them. It goes well with unsweetened tea or juice. And what is most important, such products retain their freshness and taste for a long time. To enrich the taste and decorate the appearance, cookies can be sprinkled with powdered sugar.
