Cooking lamb on the bone at home.
Step 1: prepare the meat
First, wash the loin under cold running water and transfer it to a cutting board. Cut the meat between the ribs with a sharp knife and wash each piece again under cold running water. After that, wipe dry with paper kitchen towels and transfer to a bowl or other container. Then rub each piece with salt and ground black pepper.
Next, wash the mint leaves under running water and put them on a cutting board, finely chop the greens with a knife and throw them into a bowl with the meat.
Add 2 tablespoons of vegetable oil and then thoroughly mix the contents so that the spices and mint are on all the pieces of meat. Then we put the bowl in the refrigerator for 40 – 60 minutes, during which time the meat will be permeated with aroma and spices.
Step 2: fry the lamb
We turn on the temperature of the stove to an average level. Pour oil into the pan and put it on the burner. Garlic cloves are peeled and washed under running water. Using a garlic press, squeeze the garlic into the heated fat and fry for 2-3 minutes until golden brown.
After that, we put pieces of lamb on the bottom of the pan and start cooking the meat. Fry for 7-8 minutes on one side, then turn over with a kitchen spatula and continue frying for about the same time on the other side. As a result, we should get completely ready pieces of lamb with an appetizing ruddy color. Remove them to a plate, but do not remove the pan from the heat.
Step 3: prepare mint sauce
Wash the parsley under running water and finely chop the greens on a cutting board. Add wine, meat broth, mint paste, chopped parsley, ground black pepper and salt to the oil in which the lamb was fried. Immediately after that, reduce the temperature of the stove and, while constantly stirring with a kitchen spatula, bring the liquid to a boil.
We continue cooking until the mass thickens to the desired consistency.
Step 4: serve the lamb on the bone in a homemade way
After the sauce is completely cooked, turn off the stove. Place several pieces of lamb on the bone in a beautiful serving plate and pour the sauce over it. The meat is served hot with a side dish.
Bon appetit!
