For most people, Italian cuisine is associated with pizza or pasta. The fact is that the Italians do not have a national cuisine as such, but in each province of the Italian state you will find recipes that are characteristic only for this area. Today, I want to introduce you to the recipe of one Italian salad, the feature or highlight of which is that its main ingredient is pearl barley. Sounds unusual, right? So, I suggest start cooking the Italian pearl barley salad.

Ingredients for making Italian pearl barley salad:

  1. Perlovka – 1 cup (200-250 g)
  2. Green olives (or capers) – 100 g
  3. Black olives – 100 g
  4. Parsley
  5. Green onion (optional)
  6. Pine nuts – 100 g
  7. Thyme, oregano – 2 tsp.
  8. Bay leaf

For the sauce:

  1. Lemon – half
  2. Olive oil – 60 g
  3. Mustard – 1 tbsp. spoon
  4. Salt
  5. Sugar
  6. Hot pepper (chili)

Preparation of Italian pearl barley salad:

Step 1: Prepare pearl barley

Perlovka must be soaked in advance, you can leave it overnight.

Let’s cook pearl barley in advance, as it takes about an hour to prepare. 1.5-2 liters of water is required for 1 glass of pearl barley. Since groats by themselves do not taste very good, it is necessary to add dry herbs (thyme, oregano, bay leaf) to the pan when cooking. Unforgettable salt.

After the pearl barley is cooked, drain the excess water and leave to cool.


Step 2: Prepare the sauce

It is important to make a tasty dressing (sauce) for this salad. For this, we take mustard and add olive oil to it. We squeeze the juice from the lemon, and add it to the mustard in the same way. But it is necessary to remove the zest from the lemon, which also goes into the sauce. And at the end, we add hot pepper (chili) and a little sugar. Mix everything well and the sauce is ready. You can also add some dry herbs to the sauce.


Step 3: Mix the ingredients

To begin with, we mix the pearl barley with the sauce. Add pine nuts,
which will add a resinous aroma to the salad.

Now cut the olives and olives, and finely chop the parsley and green onions.

Add olives and olives to pearl barley with sauce. If desired, you can add salt and pepper.


Step 4: Serve Italian pearl barley salad

At the end, add greens, mix thoroughly and the salad is ready.
