Peking duck – one of the most popular and favorite dishes of residents not only of Beijing, China, but also of many, many other nations. If you want to cook something special, use the recipe for this extremely tasty, spicy and aromatic dish. The long process of its preparation will live up to your hopes.
Ingredients for cooking Peking duck:
- Duck – 1 carcass (already gutted)
- Red wine (dry) – 1.5 liters
- Honey (preferably liquid) – 4 tablespoons
- Olive oil – 1-2 tablespoons
- Soy sauce – 4-5 tablespoons
- Milk – 2/3 cup
- Eggs – 2 pcs.
- Flour – 1.5 cups
- Green onion – 1 bunch
- Cucumbers – 2 pcs.
- Tomatoes – 2 pcs.
- Sweet pepper – 1 pc.
- Sunflower oil – 2-3 tablespoons
- Ground black pepper – 2 teaspoons
- Ground ginger root – 2 teaspoons
- Sea salt – 1 teaspoon

Cooking Peking duck.
Step 1: The first stage of duck preparation
Boil water in a kettle. The duck carcass must be specially prepared: hang it on a hook, cover it with boiling water, remove the skin, then remove the excess fat. The duck should be dried well with a paper towel. After that, rub it inside and out with wine and sea salt.
Step 2: The second stage of duck preparation
The duck must be planted on a jar, placed in a large saucepan, which should not be covered with a lid, then in the refrigerator for 12 hours. After this time, take the carcass out of the refrigerator and coat it in the same way (outside and inside), but not with wine, but with honey (2 tbsp. spoons), then send it back to the refrigerator for 12 hours.
Step 3: The first stage of baking meat
You need to pour 1 glass of water (cold) on the baking sheet, install the grates on it, put the duck, which needs to be covered with foil. Heat the oven to 180-200 degrees (medium heat) and place our dish in it (bake for 1 hour).
Step 4: Prepare the sauce
Combine ground ginger root, black pepper and olive oil in one deep plate and mix. When an hour has passed, the duck should be taken out of the oven and smeared with this sauce. The liquid should be poured from the pan, and it should be washed immediately, wiped dry with a towel.
Step 5: The second stage of baking
Wrap the duck again in foil and put it on a baking sheet with grates in the oven for 25-30 minutes (turn off the heat). Mix the remaining honey and soy sauce. When the duck is ready, brush it with this mixture. Wash the green onion and finely chop it. Cucumbers, sweet pepper and tomatoes should also be rinsed, peeled and cut into thin slices.
Step 6: Fry the pancakes
Break the eggs and mix with 2/3 cup of cold water and flour, beat with a whisk and add the onion. Pour oil on a hot pan, heat it a little and fry pancakes from this dough (1 tablespoon = 1 pancake).
Step 7: Serve the Peking duck
Separate the meat from the bones, put the sauce, vegetables and pancakes in separate plates. Peking duck will go well with brandy, vodka or wine. Meat must be wrapped in a pancake, dipped in sauce and eaten with vegetables.
