Seasoned soups are very popular in Georgian cuisine. They are prepared with cereals, eggs, vegetables, spicy sauces, nuts and other components that give soups a rich taste and enrich them with proteins, vitamins and trace elements. The well-known kharcho soup belongs to the relish soups. Consistence eat Georgian much thicker than a simple rice soup, and the taste and aroma are more concentrated.
Ingredients for cooking Georgian food:
- Lamb breast – 1 kg.
- Water – 3-3.5 liters
- Round-grain rice – 200 gr.
- Lamb fat (butter) – 90 gr.
- Onions – 240 gr.
- Garlic – 20 gr.
- Tomato puree – 90 gr.
- Tkemali – 120 gr.
- Suneli hops – 3 gr.
- Dried cilantro – 3 gr.
- Fresh parsley – 120 gr.
- Red capsicum – 3 gr.
- Salt – to taste

Preparation of kharcho in the Georgian way:
Step 1: Boil the lamb
Wash the lamb breast with cold running water, cut off excess fat and film with a knife. Cut the meat into pieces 2 by 3 cmput them in a saucepan, pour 3 liters of cold water and boil until half cooked (approx. 45-60 minutes)periodically removing the foam.
Step 2: Prepare the ingredients
Peel the garlic and finely chop it. Parsley is washed with cold water, scalded with boiling water and also finely chopped. Grind parsley with garlic in a mortar.
Peel the onion, chop it into small cubes.
Grease the pan with lamb fat or butter and fry chopped onions, tomato puree, stirring, 5-7 minutes. Then we add suneli hops and dried cilantro to it.
Sort the rice and wash it thoroughly with cold water.
Step 3: Combine the ingredients
Put washed rice, garlic and sauteed onion, tomato puree, tkemali sauce and salt in the broth with lamb. We cook soup 40-60 minutes, and add garlic, crushed with parsley, and red capsicum. Let’s boil the food again 3-5 minutes and turn off. Let it brew 5-10 minutesand then we take out the capsicum from the food and throw it away.
Step 4: Serve Georgian food
Pour the finished food on plates and sprinkle with parsley.

Advice:
– Instead of lamb, you can take beef brisket. In this case, the meat is cooked for 1.5 hours, after which rice and other products are added.
– Dry seasonings can be replaced with allspice and bay leaves if desired.
– Tomato puree can be replaced with tomato paste or fresh tomatoes (0.5 kg), from which the skin must be removed and cut into very small pieces with a knife.
– Along with garlic and capsicum, ground walnuts can be added to food.
