Today we will prepare bright “mushrooms” from quail eggs, tomatoes and other delicious products. If you want to decorate your festive table, such a dish is what you need. So, we present to your attention a culinary masterpiece – appetizer “Mushrooms on skewers”!
Ingredients for preparing the “Mushrooms on skewers” snack:
- Quail eggs – 8 pieces
- Cherry tomatoes – 4 pieces
- Mayonnaise – 1.5 tablespoons
- Mustard – to taste
- Green onion – 2-3 stalks
- Salt – to taste
- Ground black pepper – to taste

Preparation of the appetizer “Mushrooms on skewers”:
Step 1: prepare quail eggs.
We put dusted eggs in a small pan and pour them with running water so that it is 3-4 centimeters above their level. Add 1 tablespoon of salt there. We turn on the stove on medium heat, put it on a pan with eggs and cook them for a while 5 minutes cool. After the required time, use a tablespoon to transfer the eggs to a bowl of cold water and cool them.
Then we clean it from the shell, wash it under cold water and dry it with paper kitchen towels. Place the eggs one by one on a cutting board, cut off the sharp top of each and carefully remove the yolks. We spread the egg whites and yolks on separate deep plates.
Step 2: prepare the filling.
Next, add a tablespoon of mayonnaise, mustard, salt and ground black pepper to taste in a plate with egg yolks. Mix until a uniform consistency. Fill the quail egg whites with the resulting mixture and place them on a plate.
Step 3: prepare cherry tomatoes and green onions.
Now wash cherry tomatoes and green onions under cold running water. We dry the tomatoes with paper towels, and shake the greens over the sink, thus getting rid of the remaining water. Then we put the onion on the cutting board, finely chop it and transfer the cut into a small bowl.
Cut each cherry tomato in half horizontally and, helping yourself with a teaspoon, remove the pulp from all halves. We leave the tomato “caps” on the cutting board and proceed to the next step.
Step 4: form the “Mushrooms on skewers” snack.
Put a tomato “cap” on each stuffed protein so that small “mushrooms” come out.
Then we take one wooden skewer and string two “mushrooms” on it.
With the help of an ordinary wooden toothpick, we apply mayonnaise dots on the tomato “caps”.
We also grease the lower part of each mushroom with mayonnaise and sprinkle them with chopped green onions.
In the same way, form the other portions of the snack, put them on a plate and serve.
Step 5: we serve the appetizer “Mushrooms on skewers”.
