Homemade truffles from baby milk will delight your children, friends and loved ones. This wonderful dessert was very popular in the 90s, when there were almost no sweets on store shelves. Now, keeping up with progress, we have a wide selection of different desserts, but the most delicate ones come to mind milk truffles!

Ingredients for making milk truffles:

  1. Baby food “Malyutka” – 4 cups (cup capacity 200 milliliters)
  2. Butter from 65 to 78% fat content – 100 grams
  3. Pasteurized milk 3-5% fat – 150 ml
  4. Granulated sugar – 1 cup (cup capacity 200 milliliters)
  5. Bitter cocoa – 100 grams

Preparation of milk truffles.

Step 1: prepare the liquid mass for truffles

Turn on the stove to medium temperature and put a deep saucepan on it with the right amount of butter. When the fat melts, add pasteurized milk and granulated sugar to it. Bring the mass to a boil, reduce the stove temperature to the lowest level and cook the liquid, stirring with a tablespoon until the sugar is completely dissolved, this process will take you about 3-4 minutes. Then arm yourself with a whisk and, without stopping to stir the liquid mass, add the required amount of bitter cocoa powder. Cook the truffle for 2-3 minutes, then remove the saucepan from the stove.

Allow the liquid mass to cool up to 30-35 degrees, this is the approximate temperature of the water in which babies are bathed. Then, using a glass, add the required amount of “Malyutka” baby food in small portions, intensively mixing the mass with a whisk. When it becomes difficult to knead the truffle with a whisk, replace it with a tablespoon. As a result, you should get a thick dough-like mass. Put the resulting mixture in the refrigerator, directly in the saucepan, having previously covered it with a lid. Let the truffles stand in the cold 1 – 1.5 hours.


Step 2: form truffles

Remove the cooled truffle mixture from the refrigerator. With the help of a teaspoon, scoop up the truffle mass, place it on the palm dipped in cold running water and form a ball from the truffle mass. Then transfer it to a baking sheet previously lined with parchment paper. Form the other candies in the same way.


Step 3: decorate the truffles

The last stage is decorations, now it all depends on your imagination, to begin with, you can approach this step by standardly rolling the finished truffles in the “Malyutka” milk mixture. You can roll candies in bitter or sweet cocoa powder.

But you can also go the other way, grind the roasted peanuts in a blender to fine crumbs and roll the finished truffle in them. By the way, you can use any nuts, for example, your favorite ones.

Perfect and simple decoration chocolate crumb.

A good option is chocolate melted in a steam bath. Such candies can be sprinkled with crushed nuts or cookies after processing the chocolate.

A wonderful gift option is a truffle decorated with coconut shavings, powdered sugar, sugar balls and any other cake decorations. Put the finished truffle on a large flat dish.


Step 4: serve the milk truffles

Milk truffle is a wonderful dessert for a sweet table, which is placed on a large flat dish immediately before serving. It is pleasant to taste this delicacy with freshly brewed black tea, coffee, cocoa or warm milk. Enjoy!

– Instead of baby food, you can use powdered milk, but at the same time double the amount of sugar, instead of 1 cup put 2 – 2.5 cups.

– Instead of sugar, you can use powdered sugar, for the above amount of ingredients, 1.5 cups of powdered sugar.

– During the formation of the truffle, you can fill it with a filling in the form of ground nuts, dried fruits, chocolate dragees.
